Tomato sauce with beef and dumplings / Rajska omacka s hovezim a knedlikem

Ingredients:

2 tablespoon of flour
2 tablespoon of unsalted butter
1/2 of onion cut in small pieces
1 litter of chicken broth (or water with dried chicken broth cube)
2 cans of tomato sauce
2 pieces of allspice
2 pieces of whole black pepper
1 piece of whole cinnamon stick
2 pieces of bay leaves
4 tablespoon of sugar
1 big chuck of beef (2- 3 lbs of beef sirloin - preferred or other beef chuck)
Bread dumplings (see in other recipes)


Directions:

Make a mix of flour, butter and onion put into big pot and stir for 1 min. Add broth and mix well. Add cans of tomato sauce, all spices and sugar. Boil fo 10 minutes then strain through a strainer so there are no pieces left in sauce. Serve.

Put beef in a pressure cooker with water reaching half the meat and boil until meat is tender. If you don't have a pressure cooker boil in a normal pot for 1 hour/2 hours until tender.

Serve with bread dumplings and enjoy!

Dill sauce

Ingredients:

- 1 liter or milk (0,264 gallon)
- 1 box of fresh dill (5 branches), chopped
- instant beef bouillon for 1 liter (0,264 gallon)
- flour (prepare flour paste from 3 tbsp of flour and 1 cup of water, poor through strainer to achieve no blobs)
- 4 tablespoon of sugar
- distilled white vinegar to taste

Directions:

1. Poor one cup of water in a big pot on a low heat. Add instant beef bouillon until dissolved. When dissolved poor milk into pot and stir WELL! If you won't stir it will burn!
2. When milk is hot, add chopped dill, sugar and flour paste. The sauce will start to get thicker. (if its not thick enough, make some more flour paste and add to a mix). Cook on very low heat until it starts bubbling.
3. Boil for 5 minutes. Turn heater off and add vinegar. WARNING: When adding vinegar, never poor directly into sauce!! Take a big spoon, poor 1 teaspoon of vinegar into spoon and mix well. Continue until the sauce has sweet & sour taste. Don't put too much vinegar because you would never fix the sour taste!!!
4. Serve with boiled potatoes and hard boiled eggs.

Svickova - vegetable sauce


Ingredients

- 2 pounds of Tenderloin in one piece
- 1 bag of frozen vegetables - preferably celery, carrot, parsley root - same amount of each. You can also use fresh vegetables. The more the better.
- water
- 5 bay leaves
- 5 balls of allspice
- 5 balls of whole black pepper
- 1 cube of beef broth
- flour
- 4-8 oz. of cream
- 2 tablespoon of butter
- salt

Directions

1. Put the whole piece of meat into big baking pan, add salt. Cut vegetables into small pieces and add to the pan with meat. Add water into pan so the meat is half covered by it. Add bay leaves, whole black pepper and allspice. Cover with lid and bake (400 degrees F.). Check water level during baking.
2. When the meat is soft enough (falling apart) take it out of the pan and put aside.
3. Take out all the spices and poor vegetables into blender. (make sure all pieces of spices are out) Blend well and you have the base for our sauce.
4. Put sauce in a big cooking pot, add cube of beef broth, add as much water as much sauce you want to have (1-2 liters). Boil
5. Mix 1 cup of flour with water, make a paste of it and add to the sauce. The sauce should get thicker.
6. Cook and stir the whole time for another 5 minutes.
7. Take of the heat and add cream.DO NOT BOIL WITH CREAM!
8. Cut meat into slices (1/2 inch thick)
9. Eat with dumpling.
